Hualinchun Qianshan (千山) Fuding White Tea Cake 2021, 300g | Fuding, Fujian
Description
Fuding in northeastern Fujian is the historic home of Chinese white tea, and its Fuding Da Bai (Big White) cultivar is the classic material for Silver Needle, Bai Mu Dan and Shou Mei. Qianshan (千山, "A Thousand Mountains") from Hualinchun (华林春) is a whole 300 g cake of Fuding white tea, pressed for keeping and ageing.
White tea is the least processed of all tea types, simply withered and dried, which makes it one of the few teas that genuinely improves with age. Pressing into a cake lets it age slowly and evenly: the fresh, floral, hay-like notes of a young white gradually deepen into honey, dried fruit and a warm, date-like sweetness. In China, well-aged white tea is highly valued for exactly this reason.
Expect a pale golden liquor, soft and rounded, with floral and honey notes, a light fresh-hay character and a clean, sweet finish. Break off a piece and it steeps kindly across many infusions, gongfu style or in a Western pot, and it takes well to longer steeps. Older pressed white tea can also be gently simmered for a deeper, sweeter cup.
A cake to drink slowly over many months or to keep and follow as it changes, and a handsome gift for anyone who enjoys white tea.
