An aged white tea from wild tea trees, pressed into a brick and now five years on from its 2021 harvest. White tea is the least processed of all tea types, simply withered and dried, which makes it one of the few teas that genuinely improves with age: the fresh, light character slowly deepens into something warmer and sweeter. From the Bai Ying Shan gardens in Lincang, Yunnan, offered as a 50 g brick.
With several years of rest behind it, this is white tea in its mellow, aged phase. The cup leads with soft floral notes lifted by a clear honey sweetness, rounder and warmer than a fresh white while keeping the clean character that good white tea is loved for. Pressing into a brick lets it age slowly and evenly over time.
The liquor pours golden to light amber, deeper and warmer than a young white, soft and rounded on the palate with a gentle honeyed sweetness. Break off a piece and it steeps kindly across many infusions, the floral and honey notes holding while the tea stays smooth and easy. Good both gongfu style and in a relaxed Western pot, and it takes well to longer steeps.
A comforting, mellow tea for anyone who enjoys the warmer, aged side of white tea, and an interesting one for drinkers curious about how wild white develops with time. Easy and rewarding now, and stable to keep ageing further in its brick.
